Parmesan-Turkey Meatloaf

An American classic, the meatloaf gets a nutritional update when made with turkey, skim milk and egg white.

Makes 8 servings.

 

1 tbsp + 1 tsp olive oil                                                                        3 tbsp ketchup

1  medium onion                                                                                2 tbsp grated parmesan cheese

1 pound, 4 ounces ground turkey                                                    1/2 tsp garlic powder

4 slices whole-wheat bread, processed into fine crumbs              1/2 tsp ground basil

1/2 cup skim milk                                                                                1/4 tsp ground thyme

1 large egg white, lightly beaten                                                        1/4 tsp freshly ground black pepper

 

1.  Preheat oven to 350 degrees F.  Spray an 8" x 5" loaf pan with nonstick cooking spray; set aside.

2.  In small nonstick skillet, heat oil; add onion.  Cook over medium-high heat, stirring frequently, 4-5 minutes, until tender.

3.  In medium bowl, combine cooked onion, turkey, bread crumbs, milk, egg white, ketchup, cheese, garlic powder, basil, thyme and pepper; mix well.

4.  Shape turkey mixture into a loaf and arrange in prepared pan.  Bake 50-60 minutes, until browned and cooked through.  Let stand 10 minutes; cut into slices.

Each serving provides:  181 calories, 15 g protein, 9 g fat, 10 g carbohydrate, 247 mg sodium, 53 mg cholesterol, 1 g dietary fiber.
