Tex Mex Bake

 

1 lb lean ground beef or turkey                                 1 cup fat-free or low-fat Monterey jack cheese

2-3 T. taco seasoning                                                  ¾ cup taco sauce or salsa

salt and pepper to taste                                              1 cup ripe black olives, pitted

hot sauce                                                                        1 cup fat-free or low-fat sour cream

1 large red onion, chopped                                           (or fat free plain yogurt)

1 (16 oz) can fat-free refried beans                            1 large chopped red or green pepper

1 (4 oz) can chopped green chilies                               low-fat all natural tortilla chips

2 c. fat-free or low-fat shredded cheddar cheese

 

Cook meat until brown, drain fat and season to taste with salt, pepper, and taco seasoning.  Add 2-3 drops hot sauce and onion.  Spread beans in a 9x13 inch oven proof pan, sprayed with Pam, and top with cooked meat.  Sprinkle with green chilies, both cheeses, and taco sauce.  Bake for 20-25 minutes in 400 degree oven.  Remove from oven and garnish with black olives, sour cream (or yogurt), and bell pepper.  Serve with tortilla chips around the edges of the dish. 

 

Serves 10 to 12.
