Exotic Mayan Stew

Serves 6-8

    2 tsp. olive oil

    ˝ cup finely chopped onion

    ˝ cup diced bell pepper (red or green)

    1 16oz can diced tomatoes, un-drained

    1 15oz can Organic Soybeans, undrained

    1 15oz can golden hominy, undrained (or corn)

    2 tsp Taco seasoning

    ˝ tsp. Ground cumin

    ˝ tsp ground oregano

    1 cup water

    1 4oz can of diced chilies

 

    Heat oil in large saucepan and sauté onions and bell peppers until tender, about 4 minutes.  Add all remaining ingredients except diced chilies.  Bring to a rapid boil.  Reduce heat and simmer 10 minutes.  Remove from heat and stir in green chilies.  Add more hot water if you prefer a thinner soup.
