Festive Broccoli and Corn

4 servings, about 2/2 cup each

1 package (10 ounces) frozen broccoli cuts or broccoli flowerets                2 tsp snipped fresh basil or 1/2 tsp dried basil

1 cup frozen whole kernel corn                                                                        1/2 tsp instant vegetable bouillon (dry)

1/2 cup chopped onion (about 1 medium)                                                      1 clove garlic, finely chopped

1/2 cup water                                                                                                      1 jar (2 ounces) diced pimientos, drained

 

Heat all ingredients to boiling; reduce heat.  Cover and simmer until broccoli is crisp-tender, 4 to 5 minutes.

Microwave directions:  Omit water.  Place all ingredients in 1 1/2 quart microwavable casserole dish.  Cover tightly and microwave on high (100%) 5 minutes; stir, separating flowerets if necessary.  Cover and microwave until broccoli is crisp-tender, 2 to 4 minutes longer.

Per serving:  65 calories, 3 g protein, 14 g carbohydrate, 0 g fat, 0 mg cholesterol, 95 mg sodium
